Outdoor Grilling Success Depends Upon The Grill
Summertime outdoor BBQ grilling is one of our most favorite things to do. Whether it’s hot dogs, chicken, hamburgers, fish, shrimp, or veggies, grilling on a summer evening is tough to beat. We especially love roasted peppers, eggplant, and mushrooms in the summer. These go very well with grilled Dungeness crab.
One of our favorite recipes is to simply coat the food in a mixture of extra virgin olive oil, salt, pepper, and a mixture of crushed rosemary, parsley, and red pepper (seasoned to taste) before placing it on the grill.
This accomplishes two things. First it provides a base of generic seasoning that goes well with anything from meat to seafood to vegetables. Secondly, it coats the food with a protective layer of oil which prevents it from sticking to the grill plates and entices the flames to sear the food almost immediately. The result is seared, moist food with just the right amount of seasoning.
Having the right barbecue gas grill is important as well. Try and look for one that has a heavy grilling basket and heavy dual chambered hood. Look for the combination’s of stainless steel searing plates and porcelain coated steel grilling plates. A heavy duty grill means that after it heats up, it will retain heat and distribute it evenly over the food. This will eliminate unevenness and the hot spots that can often ruin a barbecue.
